My life as a kid had embedded some deep core wounds that I had spent the most of my life at that point diving deeply into on the side of my hospitality career. And a chef’s job is not probably the most logical environment for healing.
I simply wanted to be free of the suffering. Hospitality was actually a vehicle to me to earn money, find out about the world & travel. On the side I would travel through the North of Australia in the wintertime season, to the southern parts for that summers concentrating on farms in the middle. It absolutely was a never-ending summer of finding individuals to learn different healing modalities & bodywork from, while doing work in idyllic locations such as the wilderness of Tasmania in eco lodges, the deserts of Australia.
I set my 1975 4WD Land Rover Series 3 up with solar panel systems, 3 batteries, and kitchen inside my trailer, and i also would go and do vision quests in the desert for 40 – 60 days asking them questions in deep contemplative states to find answers about life no-one have been capable of help me with. I traveled All that mighty land called Australia over 20 years employed in the best restaurants around australia as well as the world.
I even worked in a fine dining restaurant inside the desert that was booked 2 weeks beforehand & was the Sommelier selling wines as much as Au$4400 per bottle! I mean, what a ride. A few of the those who own these places inspired me incredibly and that i cannot thank them enough. One chef, Stefano de Pieri wasn’t a qualified chef along with his own T.V channel and one of the best restaurant in the world. Mind blown I figured damn, you just need passion in life and motivation.

The better I learnt about production of our foods, the greater I realized how messed up things were. I took work with a chicken-processing farm for six or seven weeks to completely see exactly what is happening. What did I learn? Our company is really disconnected as to what is really happening. And when we have seen cuts of meat all cleaned and bleached at the supermarkets or shipped to our establishments, what we should are missing and not connecting to is perhaps all the suffering that comes with it. And That I don’t just mean the animals, for sure that’s obvious. But those who work in these places have severe mental illness. They are those who do not match society, cannot hold a conversation with “normal” folk. Cannot turn up to work all dressed sharp while keeping it together. Nope, these individuals require our help.
